As you all know my blog focuses on the whole spectrum of health, from feeling good physically, mentally and emotionally. In this post I want to share some of my favourite recipes. For many people, eating healthy is a chore. When the world is filled with glorious pastas, the cheesiest of pizzas, and layers of cake, why in the world would we ever bother eating a salad? Well, it’s because not only is it a good idea for us to eat healthy every now and then, but it’s also delicious – no lie. With the support of my mom, who is also a food blogger on Instagram, I used to cook the meals I’m going to talk about, which are a few of my favourites. Above all my mother provides me with nutritional info per serving with her recipes, which is incredibly helpful if you’re counting the cals.
Here we go..
Avo toast with a twist & Oatmeal
Breakfast is by far the most important meal and to start off the day with a lot of energy I prepare whole grain or protein bread with tuna, avocado spread and cooked eggs. I also like it with fried eggs but take into consideration to always use olive or coconut oil when cooking. According to Healthline olive and coconut oil are rich in healthy monounsaturated fats, contain a large number of antioxidants, protect against heart disease and more.

If you prefer something sweet, create your own muesli with oats! Muesli is one of my favourite easy to-go breakfast. Add any fruits you like. I personally prefer apples, pears, grapes sliced into small pieces with raisins, chia seeds, cashews – for more vitamins and minerals, and finally almond milk. Leave it overnight. And voila, enjoy the creamy, tasty flavour.

Grechka
Grechka or buckwheat belongs to a group of foods commonly called pseudocereals,which are plants that produce fruits or seeds. They are used and consumed as grains and are one of the healthiest foods thanks to its high mineral and antioxidant content. Despite its name, buckwheat is not related to wheat and is thus gluten-free. We traditionally prepare it with a tomato-vegetable-chicken sauce or for lazy days I eat it with Greek yoghurt.
If you can’t find buckwheat around your area just use couscous as an alternative, which is also very healthy and tasty.


Pearl berley stew
By far my most favourite dish is my mom’s pearl berley stew. Pick your favourite vegetables and create your own stew. Broccoli is a must for me combined with carrots, chicken feet, onions, paprika, pearl berley and topped with mashed tomatoes. Leave it for 35 to 40 minutes in the oven by 185 degrees and finito, as my mom use to say.

Borschtsch
Something that can’t be left out is my ultimate weakness. Traditional Russian beetroot soup! Cooked with beef, potatoes, cabbage and the most important ingredient beetroot. Refreshes the whole body and is also filling.

As I told you guys these are just a very few examples of the meals I love to cook. I hope I could give you a glimpse of how simple and tasty a healthy meal can be. Embrace healthy living but enjoy that chocolate too every now and then!
